Day 119 – Recipe: Healthy Apple Oatmeal Cookies!

Apple Oatmeal Cookies

I like to have “raid cookies” on hand to nibble during raid nights. I’ve made ginger snaps before, but then found this recipe. I made them last night, and they were pretty good! They tasted like a variation on the baked oatmeal, and were in cookie form. They’re definitely best warm.

However, I did make a few changes:

I used Mott’s No Sugar Added applesauce.

I put aluminum foil on the cookie sheet and sprayed it lightly with Pam cooking spray to make sure they wouldn’t stick.

I used pure maple syrup and a bit more than the recipe called for (for a total of about 1 Tbsp) and some brown sugar (about 2 Tbsp, packed). Mind you, I was taste-testing the “batter” so these are not exact measurements. Might have been a little more or less of each.

I was able to make 12 cookies, and then split them with Ktok. I didn’t feel bad at all about eating these! It was like having oatmeal in a dessert form as a raid snack!
